Buttermilk sponge cake


  • 3 eggs
  • 150 grams of sugar
  • 150 grams of melted butter
  • 150 grams of yogurt or buttermilk (any thick dairy will work)

Dry Ingredients (Combine the following):

  • 1/2 tablespoon of cardamom
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 210 grams of flour

250-300 grams of fresh or frozen blackberries and blueberries, folded in 1 tablespoon of flour


  1. Preheat your oven to 185°C (fan-forced).
  2. In a mixing bowl, combine the sugar and melted butter. Add the eggs and whisk for 1 minute.
  3. Add the yogurt (or buttermilk).
  4. Sift and gently fold in the dry ingredients.
  5. Pour the batter into a 22 or 26 cm springform pan lined with baking paper.
  6. Scatter the frozen berries evenly over the batter.
  7. Bake in the preheated oven for 45-60 minutes, or until a toothpick inserted comes out clean.
  8. Allow it to cool completely before indulging! 🤩
