Ingredients:

  • 1 litre milk
  • 1 cup powdered sugar (170g)
  • 2 eggs
  • 1 cup cornstarch (100g)
  • 2 heaping tablespoons flour (45g)
  • 1 packet vanilla
  • 125g margarine or butter
  • 1 sachet powdered whipped cream
  • 1.5-2 tablespoons heavy cream

Optional: For extra richness, reduce sugar slightly and add 100g white chocolate along with the butter.

Instructions:

  1. Whisk sugar, eggs, cornstarch, and flour in a pot. Gradually add milk, stirring until smooth. Strain if necessary.
  2. Cook over medium heat until it thickens. Remove from heat, add butter and vanilla. If lumpy, whisk until smooth.
  3. Cover with cling film touching the surface to prevent a skin from forming. Chill in the refrigerator.
  4. After 2-3 hours of chilling, whip with powdered whipped cream and heavy cream, adjusting to your desired consistency.
  5. Use this cream for various desserts, like letter cakes, where a firmer consistency is needed, or in cup desserts for a softer touch.
