For the Dough:

  • 500g flour
  • 20g fresh yeast or 1 tbsp dry yeast
  • 1 cup (230g) warm water
  • 1/2 cup (95g) sugar
  • 1 egg
  • 1/4 cup (35g) milk
  • 60g soft butter
  • A pinch of salt

For the Almond Cream:

  • 150g soft butter
  • 1 1/4 cups (150g) powdered sugar
  • 1 1/3 cups (150g) almond flour
  • 1 egg + 1 yolk
  • 1 tsp vanilla extract
  • 1/4 cup (30g) cornstarch
  • 1 tbsp (7g) flour

For the Filling:

  • A jar of berry jam

Instructions:

  1. Prepare the Dough:
    • Mix yeast, sugar, and water in a small bowl. Wait 10 minutes for activation.
    • In a mixer bowl, combine flour, yeast mixture, egg, and milk. Mix, then add butter and salt. Knead for 10 minutes to form a slightly sticky dough.
    • Let the dough rise until doubled (about 1 hour) or refrigerate overnight.
  2. Make the Almond Cream:
    • Mix soft butter and powdered sugar into a paste. Add almond flour and mix.
    • Add egg, yolk, vanilla, flour, and cornstarch. Mix until combined.
  3. Shape the Pastry:
    • Divide the risen dough into two equal parts. Roll each piece into a thin rectangle.
    • Spread a thin, even layer of almond cream, fold the dough in half, and roll again into a rectangle.
    • Cut into 5cm strips, then cut each strip into four and twist them together.
    • Form into a spiral shape, place on a baking sheet, create a small well in the center, and fill with berry jam.
    • Brush with egg and sprinkle sliced almonds.
    • Let rise for 20 minutes.
  4. Bake:
    • Bake in a preheated oven at 175°C for about 35 minutes until golden brown.
