Almond Cream Bread Pudding

Ingredients:

For the Almond Cream:

  • 150 grams soft butter
  • 1 1/4 cups powdered sugar (150 grams)
  • 1 1/3 cups almond flour (150 grams)
  • 1 egg + 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1/4 cup cornflour (30 grams)
  • 1 tablespoon flour (7 grams)

For the Bread Pudding:

  • 1 package of sliced bread
  • 3 eggs
  • 2 cups milk
  • 1/4 cup sugar
  • 50 grams sliced almonds

For Serving:

  • Powdered sugar
  • Maple syrup
  • Vanilla ice cream

Instructions:

  1. Making Almond Cream:
    • In a bowl, mix soft butter and powdered sugar into a smooth paste. Add almond flour and mix well. Incorporate the egg, egg yolk, and vanilla extract. Finally, add flour and cornflour, mixing until well combined.
  2. Preparing Sandwiches:
    • Spread the almond cream on the bread slices to make sandwiches. Cut into cubes and arrange in a baking dish suitable for the oven.
  3. Preparing the Pudding Mixture:
    • In another bowl, whisk together eggs, milk, and sugar. Pour this mixture over the bread cubes in the baking dish.
  4. Baking:
    • Drizzle any remaining almond cream over the bread. Sprinkle with sliced almonds.
    • Bake in a preheated oven at 180°C (356°F) on convection mode for about 50 minutes.
  5. Serving:
    • Once baked, dust with powdered sugar. Serve with a scoop of vanilla ice cream and drizzle with maple syrup.
