Almond-Nougat Crescent Pastries

Delight in these Almond-Nougat Crescent Pastries, a sweet pastry filled with rich almond-nougat cream and topped with a dusting of powdered sugar, perfect for a special snack or dessert.

Ingredients for 12 Crescents:

For the Dough:

  • 1/3 cup milk
  • 1/3 cup cream
  • 1/3 cup vegetable oil
  • 1 1/2 tablespoons sugar
  • A pinch of salt
  • 2 1/4 teaspoons dry yeast
  • 1 egg white (reserve the yolk for later)
  • Approximately 2 3/4 cups all-purpose flour (Type 405)

For the Filling:

  • Almond-nougat cream (homemade or store-bought)

For Garnishing:

  • Blanched almonds
  • Powdered sugar for dusting

Instructions:

  1. Preheat your oven to 180°C (356°F) with the fan setting on.
  2. In a mixing bowl, dissolve the yeast and sugar in warm milk. Let it stand for 5 minutes until frothy.
  3. Add the cream, oil, salt, and egg white to the yeast mixture. Mix well.
  4. Gradually add the flour, kneading until a soft dough forms. Cover and let it rise in a warm place for 40 minutes.
  5. Form the dough into mandarin-sized balls. Flatten each slightly, spread with almond-nougat cream, and fold into a ball again.
  6. Use a rolling pin or your hand to flatten the balls into ovals. Make cuts on one half of each oval, then roll into crescents.
  7. Place the crescents on a baking sheet lined with parchment paper. Let them rise for another 10 minutes.
  8. Mix the reserved egg yolk with a tablespoon of milk and brush it onto the crescents. Sprinkle with blanched almonds.
  9. Bake until golden brown, which should take about 15-20 minutes.
  10. Once baked, cover the crescents with a cloth for a few minutes to soften slightly.
  11. Dust with powdered sugar before serving.
