Instructions:
- Preheat your oven to 180°C (356°F) with the fan setting on.
- In a mixing bowl, dissolve the yeast and sugar in warm milk. Let it stand for 5 minutes until frothy.

- Gradually add the flour, kneading until a soft dough forms. Cover and let it rise in a warm place for 40 minutes.

- Use a rolling pin or your hand to flatten the balls into ovals. Make cuts on one half of each oval, then roll into crescents.

- Mix the reserved egg yolk with a tablespoon of milk and brush it onto the crescents. Sprinkle with blanched almonds.
- Bake until golden brown, which should take about 15-20 minutes.
- Once baked, cover the crescents with a cloth for a few minutes to soften slightly.
- Dust with powdered sugar before serving.
