For the Cookies (Makes 15):

  • 150g butter, room temperature
  • 1/4 cup (70g) white sugar
  • 3/4 cup (115g) brown sugar
  • 1 egg (55g)
  • 1 1/4 cups (160g) flour
  • 1/3 cup (40g) cocoa powder
  • 1/2 tsp (2g) baking powder
  • 1/4 tsp (1g) baking soda
  • 1/2 tsp (2g) salt
  • 100g chopped milk chocolate

For Assembling:

  • 15 white chocolate pralines or white chocolate cubes

Method:

  1. In a mixer with a paddle attachment (or manually as shown in the video), combine room-temperature butter, white sugar, and brown sugar until creamy.
  2. Gradually add the egg until fully incorporated.
  3. Sift in flour, cocoa powder, baking powder, baking soda, and salt into the mixture and blend until a uniform dough forms.
  4. Stir in the chopped milk chocolate.
  5. Refrigerate the cookie dough for about 20 minutes.
  6. Using an ice cream scoop, form equal-sized balls (40g each). Make a small indentation in the center of each ball and place a white chocolate praline inside. Close and roll into a smooth ball.
  7. Arrange on a baking tray lined with parchment paper, spaced evenly apart.
  8. Bake in a preheated oven at 175°C (350°F) for 9-10 minutes. Allow cooling slightly outside the oven until they set (they should be soft when removed from the oven and will firm up after a few minutes).
