  • For the Dough:
    • 100g cold butter, cubed
    • 1 ½ cups flour
    • ½ cup powdered sugar
    • A pinch of salt
    • 1 egg yolk
    • 2 tablespoons water

    • 40g butter
    • ½ cup sugar
    • ½ cup almond flour
    • 2 tablespoons flour
    • 1 teaspoon cinnamon
    • 1 egg yolk
  • For the Apple Filling:
    • 2 red apples
    • 2 green apples
    • A handful of sliced almonds
    • 1 teaspoon brown sugar

Instructions:

  1. Prepare the Dough: In a mixer, combine cold butter, flour, powdered sugar, and salt until crumbly. Add egg yolk and water, and mix until a dough forms. Roll between two sheets of baking paper to 3mm thickness and refrigerate.
  2. Make the Almond Filling: Mix softened butter and sugar to a creamy consistency. Add egg yolk, flour, almond flour, and cinnamon, and blend until smooth.
  3. Prepare the Apples: Peel and core the apples. Slice thinly.
  4. Assemble the Galette: Spread the almond filling on the center of the rolled-out dough, leaving edges bare. Arrange apple slices on top, then sprinkle with sliced almonds and brown sugar. Fold the edges of the dough towards the center.
  5. Bake: Brush the dough edges with beaten egg and bake in a preheated oven at 180°C for 35 minutes or until golden.
