Ingredients: Base:

  • 7-8 sheets of baklava pastry
  • 2 tablespoons butter

Caramel:

  • 180g sugar
  • 50ml water
  • 100ml cream
  • 20g butter
  • A pinch of salt
  • 1 teaspoon vanilla extract

Cheesecake:

  • 600g cream cheese, room temperature
  • 1/3 cup sugar (60g)
  • 1 teaspoon cinnamon
  • 100ml cream
  • 1 tablespoon lemon juice
  • 2 tablespoons flour (20g)
  • 3 eggs
  • 1 packet of vanilla flavoring
  • 75g caramel sauce

Apple Layer:

  • 2 apples, diced
  • 1 teaspoon cinnamon
  • 2 tablespoons brown sugar

Crumble:

  • ½ cup oatmeal
  • ½ cup flour
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • 60g butter
  • Optional: walnuts

Instructions:

  1. For the caramel, cook sugar and water in a heavy-bottomed pan until amber. Add cream, then butter, salt, and vanilla.
  2. For the base, grease a pan with butter. Layer and butter the baklava sheets, and bake at 200°C for 3-4 minutes.
  3. Mix diced apples with cinnamon and brown sugar.
  4. For the crumble, melt butter and mix with dry ingredients.
  5. For the cheesecake, blend cream cheese with sugar, then add cream, lemon juice, flour, vanilla, caramel, and eggs. Pour over the base.
  6. Add apple mixture, top with crumble, and bake at 150°C for 1 hour. Cool and refrigerate for 3-4 hours.
  7. Serve drizzled with remaining caramel.
