Apple Coffee Cake with Cinnamon Crumble and Maple Glaze

This apple coffee cake is the perfect combination of sweet and spiced, with juicy apples, a cinnamon crumble, and a delightful maple glaze.

Ingredients:

For the Cake:
  • 1/4 cup coconut oil, room temperature
  • 1/2 cup brown sugar, packed
  • 1/2 cup applesauce
  • 1 large egg, room temperature
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour (regular, gluten-free, or whole wheat)
  • 1/2 tbsp cinnamon
  • 1 tsp apple pie spice
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 2 large apples, diced (about 1 1/2 cups)
For the Crumble:
  • 1/2 cup flour (regular, gluten-free, or whole wheat)
  • 3 tbsp coconut oil, melted
  • 1/2 cup brown sugar
  • 2 tsp cinnamon
  • 1/2 tsp vanilla extract
For the Maple Glaze:
  • 1/2 cup confectioners’ sugar
  • 1/2 tbsp milk (any kind)
  • 1/4 tsp vanilla extract
  • 1 tbsp maple syrup

Instructions:

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, mix coconut oil, brown sugar, applesauce, egg, and vanilla until smooth.
  3. Sift together the flour, cinnamon, apple pie spice, baking soda, and baking powder. Fold into the wet mixture until just combined, then gently fold in the diced apples.
  4. Pour the batter into the prepared pan.
For the Crumble:
  1. Combine flour, brown sugar, cinnamon, and vanilla. Gradually add melted coconut oil, stirring with a fork until you get a crumbly texture.
  2. Spoon the crumble over the batter in the pan.
Baking:
  1. Bake for 28-32 minutes or until a toothpick comes out clean.
  2. Let the cake cool in the pan while you prepare the glaze.
For the Maple Glaze:
  1. Mix confectioners’ sugar, milk, vanilla extract, and maple syrup until smooth.
  2. Once the cake has cooled, drizzle the glaze over the top.
