  • ½ tsp salt
  • 100g light brown sugar
  • 100g granulated sugar
  • 115g unsalted butter (softened)
  • 2 large eggs
  • 2 tsp vanilla extract
  • 120ml milk
  • 2 tsp cinnamon
  • 160g chopped apples

For the Apple Filling:

  • 150g chopped apples
  • 1 tbsp granulated sugar
  • 1 tsp cinnamon
  • 1 tbsp unsalted butter

For the Crumble Topping:

  • 70g plain flour
  • 50g granulated sugar
  • 30g brown sugar
  • 50g melted butter
  • 1 tsp cinnamon

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. Make the Apple Filling:
    • In a pan, cook 150g of chopped apples with 1 tbsp of unsalted butter, 1 tbsp of granulated sugar, and 1 tsp of cinnamon for about 5 minutes, until the apples soften. Set aside to cool.
  3. Prepare the Crumble Topping:
    • In a bowl, combine 70g of flour, 50g of granulated sugar, 30g of brown sugar, and 1 tsp of cinnamon. Stir in 50g of melted butter until the mixture becomes crumbly. Set aside.
  4. Prepare the Muffin Batter:
    • In a large bowl, whisk together 250g of flour, 2 tsp of baking powder, ½ tsp of salt, and 2 tsp of cinnamon.
    • In a separate bowl, beat 115g of softened butter with 100g of light brown sugar and 100g of granulated sugar until the mixture becomes light and fluffy. Add 2 eggs and 2 tsp of vanilla extract, and mix until well combined.
    • Gradually mix the dry ingredients into the butter mixture, alternating with 120ml of milk. Stir just until combined. Fold in 160g of chopped apples.
  5. Assemble the Muffins:
    • Spoon the muffin batter into the prepared muffin tin, filling each cup about ¾ full.
    • Add a spoonful of the cooked apple filling on top of each muffin.
    • Generously sprinkle the crumble topping over the apple filling on each muffin.
  6. Bake:
    • Bake the muffins in the preheated oven for about 20 minutes, or until they are golden brown and a toothpick inserted into the center comes out clean.
