Authentic Kaak El Abbas

Ingredients:

  • 1.5 cups of milk
  • 1.75 cups of sugar
  • 5 cups of all-purpose flour
  • 1 cup of fine semolina
  • 1/2 cup of sesame seeds
  • 1 tablespoon of traditional kaaek spices
  • 1 tablespoon of baking powder
  • 1 tablespoon of active dry yeast
  • 1 tablespoon of ground turmeric
  • 1/2 teaspoon of ground cinnamon
  • 1/2 teaspoon of salt
  • 1/2 cup of unsalted butter (room temperature)
  • 1/2 cup of vegetable oil
  • Olive oil for greasing the shaping mold

Instructions:

  1. Sugar-Milk Mixture: Gently heat the milk and sugar in a pan until the sugar dissolves. Stir in the turmeric. Avoid boiling the milk.
  2. Dry Mix: Combine the flour, semolina, sesame seeds, kaaek spices, baking powder, yeast, cinnamon, and salt in a large bowl.
  3. Dough Formation: Slowly blend the milk mixture, butter, and oil into the dry ingredients. Knead the mixture until a cohesive dough forms.
  4. Resting: Allow the dough to rest for 2 hours.
  5. Baking: Shape the dough using a mold lightly greased with olive oil. Bake the cookies in a preheated oven at 180°C (356°F) for 10-12 minutes. Then, activate the upper heat of the oven to achieve a golden-brown color.
