Ingredients:

  • 1.5 packs of Mixed Biscuits (Burçak and Petibör, around 180g)
  • 75g Melted Butter
  • 1/2 Cup Crushed Walnuts
  • 1 tsp Homemade Pumpkin Pie Spice (or cinnamon)

For the Filling:

  • 400g Softened Cream Cheese
  • 200ml Heavy Cream
  • 135g Granulated Sugar
  • 1.5 tbsp Cornstarch
  • 2 Large Eggs

For the Pumpkin Puree:

  • 600g Fresh Pumpkin, cubed
  • 1 Cup Sugar

Instructions:

  1. Prepare the Pumpkin Puree:
    • Soak cubed pumpkin with sugar overnight. Add a cinnamon stick and lemon zest for extra flavor if desired.
    • Cook until tender. Set aside a portion for the filling, and blend the rest into a smooth puree. If too watery, thicken with a cornstarch-water mixture.
  2. Make the Crust:
    • Finely crush the biscuits, mix with melted butter, crushed walnuts, and spice. Press into a 19 cm pan lined with parchment paper and foil.
  3. Cheesecake Filling:
    • Blend cream cheese with sugar, then gradually mix in heavy cream. Stir in cornstarch and vanilla. Incorporate eggs one at a time.
    • Pour a layer over the crust, add a layer of pumpkin pieces, and top with remaining filling.
  4. Baking:
    • Bake in a water bath at 160°C for 60-70 minutes. The edges should be set but the center slightly wobbly.
    • Leave in the turned-off oven for 20 minutes, opening the door halfway through.
