    • 200g crushed pistachios
    • 200g crushed walnuts
    • 300g filo pastry (baklava grade)
    • 180g melted unsalted butter

    • 250ml water
    • 300g sugar
    • 1 slice of lemon
    • A pinch of cinnamon

Instructions:

    • Line a 20×26 cm deep oven dish with plastic foil.
    • Press vanilla ice cream into the dish and cover with more foil.
    • Freeze for 1 hour, then remove the block and keep it frozen.
  2. Make Baklava:
    • Preheat the oven to 160°C (fan setting).
    • Cut filo pastry to fit the dish.
    • Layer half the filo sheets in the dish, brush with half the melted butter.
    • Spread crushed nuts, press down, then layer the remaining filo sheets, adding butter between layers.
    • Cut into 10 rectangles, top with remaining butter.
    • Bake for 45-50 minutes until golden brown.
  3. Prepare Syrup:
    • Boil water, sugar, lemon slice, and cinnamon. Simmer until slightly thickened (about 15 minutes).
    • Keep the syrup warm.
  4. Assemble Baklava Ice Cream Bars:
    • Let baklava cool, then pour warm syrup over it.
    • Once at room temperature, remove the top layers of baklava.
    • Place the ice cream block on the nut layer.
    • Replace the top baklava layers and cut into bars.
    • Serve immediately or freeze for later.

    • If serving after freezing, let it thaw for 5-10 minutes before enjoying.
