Berliners, also known as German doughnuts, are delightful pastries that are perfect for any occasion. Ingredients:

For the Dough:

  • 1 cup warm milk
  • 1 packet dry yeast
  • 1/2 tea glass (about 50ml) warm water
  • 1 egg
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 1 packet vanilla sugar
  • 2 tablespoons butter, at room temperature
  • 500 grams flour (add gradually as needed)

For the Filling:

  • Pastry cream (or chocolate, marmalade, nut butter, etc.)

For the Topping:

  • Granulated sugar
  • Cinnamon

Instructions:

  1. Prepare the Dough:
    • In a large mixing bowl, combine the warm milk, warm water, and dry yeast. Stir and let it sit for a few minutes until frothy.
    • Add the egg, salt, sugar, vanilla sugar, and butter to the mixture. Stir to combine.
    • Gradually add the flour, mixing until a soft, non-sticky dough forms.
    • Knead the dough for a few minutes until smooth and elastic.
    • Cover the bowl with a cloth or plastic wrap and let the dough rise in a warm place until it doubles in size.
  2. Shape the Doughnuts:
    • Once the dough has risen, punch it down to release the air.
    • Roll out the dough on a floured surface to about 1/2 inch thickness.
    • Use a small glass or round cutter to cut out circles of dough.
    • Place the dough circles on a baking tray lined with parchment paper and cover with a cloth. Let them rest for about 15 minutes.
  3. Fry the Doughnuts:
    • Heat oil in a deep frying pan or deep fryer to 175°C (350°F).
    • Carefully place the dough circles into the hot oil, frying a few at a time until they are golden brown on both sides.
    • Use a slotted spoon to remove the doughnuts from the oil and place them on a paper towel-lined tray to drain excess oil.
  4. Coat the Doughnuts:
    • While the doughnuts are still warm, roll them in a mixture of granulated sugar and cinnamon until they are fully coated.

    • Use a piping bag to fill the doughnuts with your desired filling (pastry cream, chocolate, marmalade, or nut butter).
  6. Serve:
    • Serve the Berliners warm or at room temperature.
