- Rolling pin
- Small glass or round cutter
- Baking tray
- Parchment paper
- Frying pan or deep fryer
- Slotted spoon
- Piping bag
Ingredients:
For the Dough:
- 1 cup warm milk
- 1 packet dry yeast
- 1/2 tea glass (about 50ml) warm water
- 1 egg
- 1 teaspoon salt
- 2 tablespoons sugar
- 1 packet vanilla sugar
- 2 tablespoons butter, at room temperature
- 500 grams flour (add gradually as needed)
For the Filling:
- Pastry cream (or chocolate, marmalade, nut butter, etc.)
For the Topping:
- Granulated sugar
- Cinnamon
Instructions:
- Prepare the Dough:
- In a large mixing bowl, combine the warm milk, warm water, and dry yeast. Stir and let it sit for a few minutes until frothy.
- Add the egg, salt, sugar, vanilla sugar, and butter to the mixture. Stir to combine.
- Gradually add the flour, mixing until a soft, non-sticky dough forms.
- Knead the dough for a few minutes until smooth and elastic.
- Cover the bowl with a cloth or plastic wrap and let the dough rise in a warm place until it doubles in size.
- Shape the Doughnuts:
- Once the dough has risen, punch it down to release the air.
- Roll out the dough on a floured surface to about 1/2 inch thickness.
- Use a small glass or round cutter to cut out circles of dough.
- Place the dough circles on a baking tray lined with parchment paper and cover with a cloth. Let them rest for about 15 minutes.
- Fry the Doughnuts:
- Heat oil in a deep frying pan or deep fryer to 175°C (350°F).
- Carefully place the dough circles into the hot oil, frying a few at a time until they are golden brown on both sides.
- Use a slotted spoon to remove the doughnuts from the oil and place them on a paper towel-lined tray to drain excess oil.
- Coat the Doughnuts:
- While the doughnuts are still warm, roll them in a mixture of granulated sugar and cinnamon until they are fully coated.
- Fill the Doughnuts:
- Use a piping bag to fill the doughnuts with your desired filling (pastry cream, chocolate, marmalade, or nut butter).
- Serve:
- Serve the Berliners warm or at room temperature.
