Berliners (German Doughnuts) Recipe

Ingredients:

  • For the Dough:
    • 220 ml Warm Milk
    • 500g Flour
    • 3 tbsp Sugar
    • 10g Instant Yeast (or 20g Fresh Yeast)
    • 75g Butter (room temperature)
    • 1 tsp Salt
    • 1 packet Vanilla Sugar
    • 1 Whole Egg
    • 1 Egg Yolk
  • For the Filling:
    • 3 tbsp Sugar
    • 1 heaped tbsp Cornstarch
    • 2 Egg Yolks
    • A pinch of Salt
    • 360 ml Milk
    • 1 Vanilla Pod (or Vanilla Sugar)
    • 25g Butter
  • For Frying:
    • Vegetable Oil

Instructions:

  1. Prepare the Filling:
    • Whisk egg yolks with sugar, cornstarch, and salt.
    • Split and scrape a vanilla pod (or use vanilla sugar). Heat milk and vanilla in a pot.
    • Remove from heat, gradually add egg mixture, stirring constantly.
    • Return to heat, cook until thickened, then add butter and remove from heat.
  2. Make the Dough:
    • Mix all ingredients except butter in a bowl and knead for 5 minutes.
    • Add butter in pieces, knead for another 10 minutes.
    • Cover and let it rise for 1 hour.
    • Dust baking paper with flour. Divide dough into 50g pieces, shape into balls, and place on the tray.
    • Flatten slightly and let rise for 30 minutes.
  3. Frying:
    • Heat a generous amount of oil in a wide pan.
    • Fry the dough balls for about 2 minutes per side until golden brown.
    • Drain on paper towels.
  4. Fill and Finish:
    • Place the filling in a piping bag, inject into each Berliner.
    • Roll in sugar until well coated.
