  • 225g unsalted butter, softened
  • 150g light brown sugar
  • 75g granulated sugar
  • 2 large eggs

  • 270g plain flour
  • 1 tsp bicarbonate of soda
  • 1 tsp salt
  • 150g white chocolate chips
  • 50g sprinkles

For the Icing:

  • 170g unsalted butter, softened
  • 360g icing sugar, sifted
  • 3-4 tbsp double cream

Icing Method:

  1. Whisk softened butter until creamy.
  2. Gradually add icing sugar; whisk until smooth.
  3. Add double cream; whisk to desired consistency.
