Blueberry Cheesecake-Inspired Cookies

For the Blueberry Cookie Dough:

  • 100g Butter
  • 100g Light Brown Sugar
  • 100g Granulated Sugar
  • 260g All-Purpose Flour
  • 1/4 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 40g Greek Yogurt or Sour Cream
  • 60g Milk (any kind, at room temperature)
  • 80g Blueberries (fresh or frozen)

Cookie Dough Method:

  1. Start by melting the butter in a bowl. Once melted, blend in both sugars and whisk together until the mixture turns creamy, taking about 3-4 minutes.
  2. Mix in the yogurt and milk to the creamy butter-sugar base until well combined.
  3. Sift together the dry ingredients and fold them into the wet mixture to create a soft cookie dough.
  4. Gently fold the blueberries into the dough for a streak of berry goodness.
  5. Using a scoop, place portions of the dough onto a baking sheet lined with parchment paper. Dot with extra blueberries and, if desired, chocolate chips. Refrigerate the dough for 4-5 hours.
  6. Preheat your oven to 350°F (175°C). Bake the chilled cookies for 15-17 minutes. Allow them to cool on a wire rack completely before frosting.

For the Cream Cheese Frosting:

  • 113g Unsalted Butter
  • 120g Icing Sugar, sifted
  • 113g Cream Cheese, room temperature
  • 18g Blueberry Jam or Compote
  • Zest of 1 Lemon

Frosting Method:

  1. Beat the butter with an electric mixer until fluffy, about 4-5 minutes, then gradually incorporate the sifted icing sugar, beating for an additional 2 minutes.
  2. Add the cream cheese to the mixture, blending on medium speed until smooth, about 2-3 minutes.
  3. Stir in the blueberry jam or compote along with the lemon zest until the frosting is uniformly mixed.

To Assemble:

  • Pipe the blueberry cream cheese frosting onto the cooled cookies using a round piping tip for a neat swirl.
  • Finish by sprinkling with graham cracker crumbs for that quintessential cheesecake crunch.
