Brioche Pastry with Luscious Fillings: A Decadent Treat

Ingredients:

  • Brioche Dough:
    • 500g flour
    • 1/2 cup sugar (100g)
    • 1 large egg
    • 25g fresh yeast / 8g dry yeast
    • 1 cup milk (240g)
    • 100g butter
    • 2/3 tbsp salt (7g)
  • Spread:
    • 150g soft butter
  • Dipping:
    • 100g sugar

Instructions:

  1. Dough Preparation: In a mixer, combine milk, yeast, and sugar. Add the egg and flour, and mix on medium speed until combined. Gradually add salt and butter until fully incorporated. Increase speed and knead for 6 minutes until the dough pulls away from the bowl sides. Let the dough rise until doubled in size (overnight in the fridge recommended).
  2. Rolling and Folding: An hour before rolling, take the butter out of the fridge. Roll the risen dough on a floured surface into a thin rectangle. Evenly spread soft butter over it. Fold the dough into thirds (upper part to the middle, then the bottom part over it). For more layers, roll the dough thinner. Rotate the folded dough 90 degrees, roll out, and fold again. Freeze for 10 minutes.
  3. Shaping: Roll the dough into a thin rectangle. Cut into 4cm wide strips with a pizza cutter. Roll each strip into a spiral. Place in buttered muffin tins and let rise for 40 minutes.
  4. Baking: Preheat the oven to 180°C. Bake for 30 minutes or until golden brown. While warm, dip the pastries into a bowl of sugar.
  5. Filling (Optional): Once slightly cooled, fill with your choice of filling like whipped ganache, cream patisserie, or chocolate spread.
