Brown Butter Chocolate Caramel Stuffed Cookies

Indulge in these decadent cookies that feature a rich brown butter dough, stuffed with gooey caramel chocolates, and studded with chocolate chips.

Ingredients:

  • 1 cup unsalted butter
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 1 large egg, room temperature
  • 1 egg yolk, room temperature
  • 2 tsp vanilla extract
  • ½ tsp salt
  • 1 tsp baking soda
  • 2 cups all-purpose flour
  • 18 caramel-filled chocolates
  • 1 ½ cup chocolate chips

Instructions:

  1. In a pan over medium-high heat, brown the butter until you see brown bits forming at the bottom, about 5 minutes. Remove from heat and let it cool for 20-30 minutes.
  2. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  3. In a mixing bowl, blend the cooled brown butter with granulated and brown sugars until light and fluffy.
  4. Mix in the egg until fully combined, then stir in the egg yolk and vanilla extract.
  5. In a separate bowl, whisk together the flour, salt, and baking soda.
  6. Gradually mix the dry ingredients into the wet ingredients until just combined.
  7. Take about 1 ½ tablespoons of dough and flatten it in your hand. Place a caramel chocolate in the center.
  8. Take another 1 ⅓ tablespoons of dough, place on top, and seal the edges, ensuring the chocolate is fully enclosed. Gently form it into a ball.
  9. Pour the chocolate chips into a small bowl. Press the cookie dough ball into the chocolate chips so they stick to the surface.
  10. Place the cookie on the prepared baking sheet and repeat with the remaining dough.
  11. Bake for 11-12 minutes or until the edges are brown but the centers are soft.
  12. Allow the cookies to cool on the sheet for a few minutes before serving.
