Indulge in these decadent cookies that feature a rich brown butter dough, stuffed with gooey caramel chocolates, and studded with chocolate chips.
Ingredients:
- 1 cup unsalted butter
- ¾ cup granulated sugar
- ¾ cup brown sugar
- 1 large egg, room temperature
- 1 egg yolk, room temperature
- 2 tsp vanilla extract
- ½ tsp salt
- 1 tsp baking soda
- 2 cups all-purpose flour
- 18 caramel-filled chocolates
- 1 ½ cup chocolate chips
Instructions:
- In a pan over medium-high heat, brown the butter until you see brown bits forming at the bottom, about 5 minutes. Remove from heat and let it cool for 20-30 minutes.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, blend the cooled brown butter with granulated and brown sugars until light and fluffy.
- Mix in the egg until fully combined, then stir in the egg yolk and vanilla extract.
- In a separate bowl, whisk together the flour, salt, and baking soda.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Take about 1 ½ tablespoons of dough and flatten it in your hand. Place a caramel chocolate in the center.
- Take another 1 ⅓ tablespoons of dough, place on top, and seal the edges, ensuring the chocolate is fully enclosed. Gently form it into a ball.
- Pour the chocolate chips into a small bowl. Press the cookie dough ball into the chocolate chips so they stick to the surface.
- Place the cookie on the prepared baking sheet and repeat with the remaining dough.
- Bake for 11-12 minutes or until the edges are brown but the centers are soft.
- Allow the cookies to cool on the sheet for a few minutes before serving.
Enjoy these warm, with the chocolate caramel melting delightfully with every bite, perfect for an after-dinner treat or a sweet snack anytime.
