Ingredients:

For the Carrot Layer:

  • 1 kg medium-sized carrots
  • 1 cup granulated sugar
  • 1/2 cup water
  • 50g butter
  • 1 packet petit beurre biscuits
  • 1 cup walnuts, chopped
  • Shredded coconut (for sprinkling)

For the Pudding:

  • 4 cups milk
  • 2 tablespoons flour
  • 1.5 tablespoons cornstarch
  • 5 tablespoons sugar
  • 1 packet vanilla sugar
  • 50g butter

Instructions:

  1. Prepare the Carrot Layer:
    • Grate the carrots and place them in a saucepan.
    • Add the water, butter, and sugar to the carrots.
    • Cook over low heat for about 20 minutes, or until the carrots are soft and the mixture has thickened.
    • Break the petit beurre biscuits into small pieces.
    • Once the carrot mixture has cooled slightly, stir in the biscuit pieces and chopped walnuts.
  2. Prepare the Baking Dish:
    • Lightly moisten your hands and use them to dampen the bottom of a Borcam or a similar baking dish.
    • Sprinkle a layer of shredded coconut over the bottom of the dish.
    • Spread the carrot mixture evenly over the coconut layer.
  3. Prepare the Pudding:
    • In a saucepan, combine the milk, flour, cornstarch, and sugar.
    • Cook over medium heat, whisking continuously, until the mixture thickens and comes to a boil.
    • Remove from heat and stir in the vanilla sugar.
