Ingredients:

  • 50g granulated sugar (¼ cup)
  • 90g brown sugar (½ cup)
  • 125g butter (room temperature)
  • A pinch of salt
  • 1 room temperature egg
  • 1 packet of vanilla
  • 220g flour (2 cups)
  • 2 tbsp cornstarch (25g)
  • ½ tsp baking soda
  • ½ packet baking powder
  • 200g chocolate, chopped (adjust to taste)

Note: Ensure the butter is soft but slightly cool to the touch.

Instructions:

  1. Preheat oven to 175°C with both top and bottom heat settings.
  2. Combine flour, baking soda, cornstarch, salt, and vanilla in a bowl.
  3. Whip butter and sugars for 4-5 minutes.
  4. Mix in the egg just until combined.
  5. Add dry ingredients and mix with a spatula, then fold in most of the chocolate.
  6. Scoop out dough with a spoon, roll into balls, and arrange on a tray. Add remaining chocolate pieces on top.
  7. Bake for 10-12 minutes until edges are slightly golden.
