Chewy Chocolate Chunk Cookies with Chickpea Flour

Indulge in these freshly baked chocolate chunk cookies, made even more special by using chickpea flour as a vegan egg substitute. These delightful treats are chewy at the center with crispy edges, packed with gooey chocolate, and free from milk or yogurt.

Ingredients: Yields 8-9 cookies

  • 65g Butter (You can use vegan butter or any butter of your preference)
  • 50g Soft Light Brown Sugar
  • 40g Granulated Sugar
  • 1/2 tbsp Chickpea Flour (also known as Gram or Besan Flour) mixed with 1/2 tbsp water, left to sit for 10 minutes
  • 1 tsp Vanilla Extract
  • 75g All-Purpose Flour
  • 1/4 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/8 tsp Salt
  • 50g Dark Chocolate Bar, chopped into chunks

Instructions:

  1. Preparation: Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. Butter & Sugar Mixture: In a large mixing bowl, melt the butter (ensure it’s not too hot). Whisk in both the light brown and granulated sugars for about 2-3 minutes until well combined.
  3. Wet Ingredients: Add the chickpea flour paste and vanilla extract to the butter-sugar mixture. Mix thoroughly until all ingredients are integrated.
  4. Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually fold this into the butter mixture to form the cookie dough.
  5. Chocolate Chunk Addition: Fold in half of the chocolate chunks into the dough.
  6. Resting: Allow the cookie dough to rest at room temperature for about 30 minutes.
  7. Scoop & Arrange: Using a small cookie scoop or spoon, portion out the dough onto the prepared baking tray. Top each mound of dough with the remaining chocolate chunks. Remember, these cookies spread more than typical cookies, so give them enough space.
  8. Baking: Bake in the preheated oven for 12-15 minutes, or until the edges are golden.
  9. Cooling: Allow the cookies to cool completely on the baking tray. This helps them set and achieve the desired chewiness.
  10. Finishing Touch: If desired, sprinkle a pinch of sea salt over each cookie for an added flavor kick.
