Ingredients

- ⅓ cup (75g) unsalted butter, melted

- ½ cup (6oz/170ml) sweetened condensed milk
- 1 large whole egg
- 2 large egg yolks
- 1 teaspoon (5ml) pure vanilla extract
- ½ cup (120ml) lime juice
- ⅓ cup (80ml) full-fat yogurt
- Zest of 1 lime
- ¼ cup (50g) granulated sugar
For the Topping:
- 1 cup cold heavy cream
- 1 tablespoon powdered sugar
- Lime zest, to garnish
Instructions
- Preheat the oven to 350°F (175°C). Prepare an 8x8-inch pan with parchment paper.
- For the crust, process graham crackers into fine crumbs, add brown sugar and melted butter, and pulse. Press firmly into the bottom of the pan and bake for 15 minutes.
- For the filling, whisk together condensed milk, egg, egg yolks, and vanilla. Incorporate lime juice, yogurt, lime zest, and sugar. Pour over the baked crust and bake at 325°F (163°C) for 15-20 minutes.
- Cool completely, then refrigerate for at least 4 hours.
- For the topping, whip the heavy cream with powdered sugar until stiff peaks form. Spread over the chilled bars, garnish with lime zest, lift out of the pan, cut into squares, and serve chilled.
