Chocolate and Pistachio Cream-Filled Doughnuts

Ingredients: Dough:

  • 500g all-purpose flour
  • 9g dry yeast
  • 75g sugar
  • 2 large eggs
  • 100g room temperature butter
  • 200g milk
  • 1 tbsp alcoholic liqueur
  • 3g salt

Cream Filling:

  • 500ml milk
  • 100g egg yolks
  • 70g sugar
  • 50g cornflour
  • 1 tbsp vanilla extract/paste
  • A pinch of salt
  • 100g room temperature butter
  • 100g dark chocolate/ 50g pistachio paste

Instructions:

  1. In a mixer with a dough hook, combine all dough ingredients. Mix at low-medium speed for about 12 minutes until smooth and slightly sticky.
  2. Cover the bowl and let the dough rise for about an hour or until it doubles in size.
  3. In a bowl, whisk egg yolks, cornflour, vanilla, and sugar. Simultaneously, boil milk in a pot.
  4. Gradually add hot milk to the egg yolk mixture, stirring continuously. Return the mixture to the pot and cook over medium heat, stirring constantly until the cream thickens.
  5. Remove from heat, add butter and dark chocolate/pistachio paste, and stir until combined.
  6. Cover the cream with cling film and chill.
  7. Cut parchment paper into squares and grease them. Divide the dough into 45-50g balls and place them on the paper squares. Let them rise again for about an hour and a half.
  8. Heat frying oil to 160-170°C and carefully fry the doughnuts for about 3 minutes per side. Allow to cool after frying.
  9. Coat the doughnuts in granulated sugar.
  10. Fill the doughnuts with the chilled pastry cream using a piping bag.
