Ingredients:

For the Dough:

  • 3 cups flour
  • 1 tea glass (about 100ml) sugar
  • A pinch of salt
  • 20g fresh yeast (half a packet)
  • 150ml warm milk
  • 80g butter (room temperature)
  • 1 egg
  • 1 egg yolk

For the Chocolate Dough:

  • 1/2 cup flour
  • 2 tablespoons cocoa powder

For the Filling:

  • Chocolate pieces

For the Topping:

  • 1 egg
  • 2 tablespoons milk

Instructions:

  1. Prepare the Dough:
    • In a large mixing bowl, combine the flour, sugar, and salt. Mix well.
    • Dissolve the yeast in the warm milk and let it sit for a few minutes until frothy.
    • Add the yeast mixture and the butter to the flour mixture, and start mixing. Add the egg and egg yolk, and continue to knead the dough until it is sticky but smooth.
    • Divide the dough into two equal parts. To one part, add the additional 1/2 cup of flour and knead until incorporated. To the other part, add the cocoa powder and knead until well mixed.
    • Cover both doughs with plastic wrap and let them rise in a warm place for 1-2 hours, or until doubled in size.
  2. Shape the Brioche:
    • Preheat your oven to 180°C (350°F).
    • Roll out each piece of dough on a lightly floured surface into rectangles of similar size.
    • Place the chocolate dough on top of the plain dough and roll them together into a log.
    • Cut the log into even slices and place them on a baking tray lined with parchment paper.
    • Cover with a clean kitchen towel and let them rise for another 30 minutes.
  3. Prepare the Topping:
    • In a small bowl, whisk together the egg and milk.
    • Brush the top of the risen dough slices with the egg and milk mixture.
  4. Bake the Brioche:
    • Bake in the preheated oven for about 35 minutes, or until the brioche is golden brown and sounds hollow when tapped. Keep an eye on them to prevent over-baking.
    • Once baked, remove from the oven and cover with a clean cloth. Let them cool before serving.
