Chocolate-Centered Spiced Pumpkin Cookies

Ingredients:

  • 1/2 cup of unsalted butter, chilled and cut into small pieces
  • 1 cup of dark brown sugar, packed (light brown sugar is a suitable substitute)
  • 1/4 cup of pumpkin puree for a moist and tender crumb
  • 1 large egg to bind the dough
  • 1 tsp of sour cream for added richness
  • 1 tsp of pure vanilla extract for depth of flavor
  • 2 cups of all-purpose flour for structure
  • 1 tsp of pumpkin pie spice for that fall flavor
  • 1/2 tsp of baking soda for lift
  • 1/2 tsp of cream of tartar to stabilize the dough
  • 1/2 tsp of salt to enhance the sweet flavors
  • Optional: 15 pieces of dark or milk chocolate for a gooey center
  • 1 tbsp of ground cinnamon for rolling
  • 1 tbsp of granulated sugar for a sweet finish

Instructions:

  1. Cream the cold butter and brown sugar in a large bowl until fluffy.
  2. Mix in the pumpkin puree, egg, sour cream, and vanilla until just combined.
  3. Gradually add in the flour, pumpkin pie spice, baking soda, cream of tartar, and salt, and mix into a dough.
  4. Chill the dough for 30 minutes in the refrigerator.
  5. Preheat the oven to 350°F (175°C) when the dough is almost ready.
  6. Form the dough into balls, placing a piece of chocolate in the center of each if desired.
  7. Combine the cinnamon and sugar in a small bowl and roll each ball to coat.
  8. Place the cookies on a baking sheet and bake for 10-12 minutes.
  9. Allow the cookies to cool before serving.
