Ingredients:

  • Yeast: 2 1/4 tsp (7g)
  • Warm Water: 1/2 cup (110ml)
  • Granulated Sugar: 1 tsp + 5 tbsp (81g total)
  • Milk: 1/2 cup (110ml)
  • Medium Eggs: 2 (100g)
  • Vanilla Extract: 1 tsp
  • All-Purpose Flour: 4 cups (520g)
  • Butter: 4 tbsp (56g), room temperature
  • Chocolate Chips: 2 cups
  • Egg White: 1 (for filling)
  • Pastry Cream (optional)
  • Egg: 1 (for egg wash)
  • Pearl Sugar

Instructions:

  1. Yeast Mixture: In a bowl, whisk together warm water, 1 tsp sugar, and yeast. Let it sit until it's fluffy (about 5-7 minutes).
  2. Dough Preparation: In a large mixing bowl or stand mixer, combine flour, milk, remaining sugar, salt, eggs, vanilla, and the yeast mixture. Mix for 3-4 minutes, then cover and let it rest at room temperature for 10-12 minutes.
  3. Kneading: Add room-temperature butter to the dough and knead for 12-15 minutes. Cover with plastic wrap and refrigerate overnight, or let it rest at room temperature for 45-60 minutes followed by 1-3 hours in the fridge.
  4. Rolling and Filling: Roll the dough into a 10x20 inch rectangle on a floured surface. Brush with egg white and sprinkle chocolate chips over half the dough. Fold the other half over. If using pastry cream, spread it before adding the chocolate chips.
  5. Cutting and Proofing: Cut the dough into 2-inch pieces. Place on lined baking sheets. Cover and let them rise for 45-60 minutes.
  6. Baking: Preheat the oven to 350°F (175°C). Brush the tops of the brioche with beaten egg and sprinkle pearl sugar. Bake for 15-20 minutes until golden brown.
  7. Serving: Let the brioche cool before serving, ideally with a caramel latte for a delightful pairing.

Enjoy your homemade Chocolate Chip Brioche, a heavenly combination of sweet and buttery flavors that's perfect for any occasion!
