Ingredients:
For the Dough:
- 410ml whole milk
- 90g butter
- 690g bread flour
- 60g cocoa powder
- 22g fast action dry yeast
- 150g granulated sugar

- 65g brown sugar
- 50g butter, softened
- 1 tbsp ground cinnamon
For the Glaze:
- 30g icing sugar
- 2 tbsp melted Nutella
- 1 tbsp vanilla extract
- 80ml double cream
Instructions:
- Prepare the Dough:
- In a saucepan, warm the milk and dissolve the 90g of butter in it, stirring regularly until fully melted. Remove from heat and let it cool slightly.
- In a large mixing bowl, combine the bread flour, cocoa powder, fast action dry yeast, and granulated sugar.
- Pour the milk and butter mixture into the dry ingredients, mixing to form a dough.
- Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
- Place the dough in a lightly greased bowl, cover it, and let it rest in a warm place for at least an hour, or until doubled in size.
- Prepare the Filling:
- Once the dough has risen, roll it out on a floured surface into a large rectangle.
- Spread the 50g of softened butter evenly over the dough, reaching the edges.
- In a small bowl, mix the brown sugar, additional 50g of butter, and ground cinnamon. Sprinkle this mixture evenly over the buttered dough.
- Shape the Rolls:
- Starting from one long side, tightly roll the dough into a log.
- Cut off any uneven edges, then slice the log into even rolls.
- Place the rolls on a parchment-lined baking tray, leaving space between each roll. Let them rise for another hour until they have doubled in size.
- Bake the Rolls:
- Preheat your oven to 356°F (180°C).
- Bake the rolls in the preheated oven for 30-35 minutes, or until golden on top and cooked through.
- Prepare the Glaze:
- While the rolls are cooling, mix the icing sugar, melted Nutella, vanilla extract, and double cream in a bowl until smooth.
