Sponge Base:

  • 3 egg whites
  • 3 tablespoons of sugar
  • 1 packet of vanilla sugar
  • 2 tablespoons of flour
  • 1 tablespoon of cocoa powder
  • 2 tablespoons of ground hazelnuts
  • 1/2 teaspoon of baking powder

Chocolate Mousse:

  • 300g of dark chocolate
  • 100ml of milk
  • 400g of whipping cream
  • 3 egg yolks
  • 50g of sugar

  • 2 tablespoons of orange marmalade

  2. For the mousse, heat the milk until it boils. In a separate bowl, whisk egg yolks and sugar, then slowly add the hot milk. Return to low heat, stirring until it thickens. Pour this over broken chocolate pieces, stirring until smooth. Once cooled, fold in whipped cream.
