To make these delicious Chocolate Peanut Butter Bites, you will need the following equipment:

  • Mixing bowl
  • Spoon or spatula
  • Microwave-safe bowl
  • Plate
  • Parchment paper
  • Freezer

Ingredients:

For the Bites:

  • 1 cup (240 ml) lactose-free Greek yogurt
  • 3 tablespoons unsweetened peanut butter
  • 1 tablespoon maple syrup or honey

For the Topping:

  • 100 g (3.5 oz) 80% dark chocolate
  • Optional: 1 teaspoon coconut oil

Instructions:

  1. Mix the Ingredients:
    • In a mixing bowl, combine the lactose-free Greek yogurt, unsweetened peanut butter, and maple syrup or honey. Mix until well combined.
  2. Shape the Bites:
    • Line a plate with parchment paper. Use a spoon to drop dollops of the yogurt mixture onto the plate, creating small bite-sized mounds.
  3. Freeze the Bites:
    • Place the plate in the freezer and let the bites freeze for 1 1/2 to 2 hours until they are firm.
  4. Prepare the Chocolate Topping:
    • In a microwave-safe bowl, melt the dark chocolate with the optional coconut oil. Heat in short intervals, stirring in between, until the chocolate is fully melted and smooth. Let the chocolate cool slightly before using it for dipping.
  5. Dip the Bites:
    • Remove the frozen yogurt bites from the freezer. Dip each bite into the melted chocolate, ensuring they are fully covered. Place them back on the parchment-lined plate.
  6. Store and Serve:
    • Store the chocolate-covered bites in the freezer. Let them defrost for about 15 minutes before eating for the best texture.
