Chocolate Rice Tart
Ingredients:
1 batch of shortcrust pastry
1 liter of milk
250g Arborio or Carnaroli rice
3 tablespoons of sugar
Zest of one lemon
2 eggs
200g dark chocolate
2-3 tablespoons of unsweetened cocoa powder
50g butter
Vanilla powdered sugar, as needed
Seeds from one vanilla pod (or vanillin)
A small glass of liquor
Instructions:
Cook the Rice: In a large pot, bring the milk to a boil with the sugar and lemon zest. Add the rice and cook for about 25 minutes, stirring occasionally, until the milk is absorbed.
Prepare the Filling: Remove the pot from heat, discard the lemon zest, and add the chopped dark chocolate, cocoa powder, eggs, butter, liquor, and vanilla. Mix well until the chocolate is melted and everything is combined.
