  • 2 medium Granny Smith apples, peeled and diced
  • 20g granulated sugar

  • 170g salted butter, softened
  • 165g light brown sugar
  • 100g granulated sugar
  • 1 large egg + 1 egg yolk
  • 2 tsp vanilla extract
  • 215g plain flour

For the Topping:

  • 30g granulated sugar
  • 1 tsp cinnamon

Instructions:

  1. Mix diced apples with sugar and cinnamon for the filling.
  2. Cream butter and sugars for the blondie base. Add egg, yolk, and vanilla.
  3. Blend in flour.
  4. Spread the batter in an 8x8” tin. Layer with apple filling.
