Cinnamon Roll Banana Cake with Glaze

For the Cinnamon Swirl:

  • 150g light brown sugar
  • 2 tbsp cinnamon
  • 120g unsalted butter, melted

For the Cake:

  • 360g plain flour
  • 200g caster sugar
  • 4 tsp baking powder
  • 300ml whole milk, room temperature
  • 1 tsp vanilla extract
  • 2 large eggs, lightly beaten, room temperature
  • 110g unsalted butter, melted
  • 3 large ripe bananas, mashed

For the Glaze:

  • 200g icing sugar
  • 50ml milk

Instructions:

  1. Mix brown sugar, cinnamon, and melted butter for the swirl.
  2. Combine flour, sugar, and baking powder. Add milk, vanilla, eggs, melted butter, and mashed bananas.
  3. Pour half the batter into an 8x10” tin. Layer with cinnamon swirl mixture, then top with remaining batter.
  4. Bake at 180°C (160°C fan) for 40-45 minutes until golden.
  5. Mix icing sugar and milk for the glaze and drizzle over the cooled cake.
