Classic Glazed Doughnuts

Makes a batch of light and fluffy doughnuts

Ingredients:

For the Doughnuts:

  • 1 3/4 cups plus 2 tablespoons (300g) all-purpose flour
  • 1/2 cup plus 2 tablespoons (150g) milk, warmed
  • 1 whole egg plus 1 egg yolk
  • 1/4 cup (55g) butter, softened
  • 2 tablespoons (30g) granulated sugar
  • 3/4 teaspoon (5g) salt
  • 3/4 teaspoon (2g) instant dry yeast

For the Glaze:

  • 1 cup powdered sugar
  • 2-4 tablespoons warm milk (adjust to achieve the desired consistency)
  • 1/2 teaspoon vanilla extract (optional, for added flavor)

Cooking Instructions:

  1. Activate the yeast in a bowl by combining it with the warm milk. Allow it to sit for a few minutes until frothy.
  2. Add flour, sugar, salt, and the eggs to the yeast mixture. Knead with the dough hook attachment on a stand mixer for 2-4 minutes until it starts to form.
  3. Gradually incorporate the softened butter into the dough. Continue kneading for 10-15 minutes until the dough is smooth and elastic. Add a little more flour if the dough is too sticky.
  4. Transfer the dough to a greased bowl, cover with a towel or plastic wrap, and let it rise in a warm place until doubled in size, about 1-2 hours.
  5. Roll out the dough on a floured surface to about 1/2-inch thickness and cut out doughnut shapes with a cutter. Let the cut doughnuts rise again on a lined tray until puffy.
  6. Heat oil in a deep pot to 350-375°F (175-190°C) and fry the doughnuts for 1-2 minutes on each side until golden. Remove and drain on paper towels.
  7. For the glaze, whisk powdered sugar, warm milk, and vanilla extract in a bowl. Dip each cooled doughnut into the glaze, allowing excess to drip off.
  8. Allow the glaze to set before serving.
