Ingredients:
- 2 cups (500 grams) of mascarpone cheese
- 24 ladyfinger biscuits
- 1 cup (230 ml) of strong brewed coffee, cooled
- 4 egg yolks, at room temperature
- 3 egg whites, at room temperature
- 6 tablespoons of sugar
- 1 tablespoon of cocoa powder
- Optional: Grated dark chocolate for topping
Instructions:
- Egg Yolk Mixture: Whisk the egg yolks with 3 tablespoons of sugar until thick and pale. Blend in the mascarpone until the mixture is smooth and creamy. Set aside.
- Egg Whites: In a clean bowl, start whipping the egg whites. Once frothy, gradually add the remaining 3 tablespoons of sugar and continue to whisk until stiff peaks form.
- Combine: Gently fold a third of the whipped egg whites into the mascarpone mixture. Repeat with the remaining egg whites, folding in a third at a time, being careful to keep the mixture light and airy.
- Assembly: Briefly dip each ladyfinger into the coffee and layer them in a dish. Spread half of the mascarpone mixture over the ladyfingers. Optionally, sprinkle some grated dark chocolate over this layer. Repeat the layers.
- Chill: Refrigerate the tiramisu overnight to allow the flavors to meld and the dessert to set.
