Classic Key Lime Pie

This classic key lime pie is irresistibly tangy and creamy, with a rich filling and a buttery graham cracker crust, all topped with homemade whipped cream.

Ingredients:

For the Pie:
  • 4 egg yolks
  • 1 tsp lime zest
  • 2 cans sweetened condensed milk
  • 1/3 cup sour cream
  • 1/2 cup lime juice (about 4 limes)
  • 1 graham cracker crust
For the Whipped Cream:
  • 1 1/2 cups heavy whipping cream
  • 3/4 cup powdered sugar

Instructions:

  1. In a mixing bowl, combine the egg yolks and lime zest.
  2. Mix in the sour cream until it's fully integrated.
  3. Stir in the sweetened condensed milk followed by the lime juice, whisking well. Let the mixture sit for about 20 minutes to thicken slightly.
  4. Preheat your oven to 350°F (175°C).
  5. Pour the lime filling into the graham cracker crust, smoothing out the top.
  6. Bake for 20 minutes. Once done, allow the pie to cool completely at room temperature.
  7. Chill the pie in the refrigerator for 3-4 hours to set properly.
  8. For the whipped cream, whip the heavy cream and powdered sugar together until stiff peaks form.
  9. Once the pie is set, top it with the freshly whipped cream.
