Classic Pumpkin Pie with Homemade Crust

This traditional pumpkin pie recipe features a homemade crust and a rich, spiced filling — a staple for the holiday season or a cozy fall dessert.

Ingredients:

For the Pie Crust (9-inch):
  • 1 1/2 cups (190g) all-purpose flour
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 4 oz (115g) unsalted butter, chilled and cut into small pieces
  • 5 to 6 tablespoons ice cold water
For the Filling:
  • 1 (15 oz or 450g) can pumpkin puree
  • 2 large eggs
  • 1 (14 oz or 400g) can sweetened condensed milk
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract

Instructions:

For the Pie Crust:
  1. In a food processor, combine flour, sugar, and salt and pulse to mix.
  2. Add the chilled butter pieces and pulse until the mixture resembles coarse crumbs with pea-sized pieces.
  3. Gradually add 4 tablespoons of ice cold water, pulsing after each addition. Add more water as needed until the dough comes together.
  4. Shape the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Baking the Pie Crust:
  1. Preheat the oven to 400°F (200°C). Lightly grease a 9-inch pie pan with butter.
  2. Roll out the chilled pie dough into a 13-inch diameter circle and transfer it to the prepared pie dish. Tuck the edges under and flute as desired.
  3. Cover the crust with aluminum foil, fill with pie weights, and bake for 15 minutes.
For the Filling:
  1. In a large bowl, whisk together the pumpkin puree and eggs.
  2. Add the condensed milk, cornstarch, salt, cinnamon, ginger, nutmeg, and vanilla extract. Whisk until well combined.
Assembling and Baking the Pie:
  1. After partially baking the crust, remove the foil and weights.
  2. Pour the pumpkin filling into the crust and bake at 350°F (175°C) for approximately 55 to 60 minutes, or until the center is set. Check the pie after 30 minutes and cover the edges with foil if necessary to prevent over-browning.
  3. Allow the pie to cool completely before serving.
