  • 320g (11.25 oz) dairy-free sweetened condensed milk (1 regular can)
  • 4 cups (320g) fine shredded or desiccated coconut, plus extra for rolling

For Decorating:

  • 3 tbsp vegan white chocolate or white candy melts, melted
  • 3 tbsp black-colored icing
  • 2 tbsp orange-colored icing
  • 24 thin pretzel sticks (about 2 inches / 5 cm each)
  • 12 red candy straps (about 5 inches / 13 cm each)

Instructions:

  1. Make the Snowmen Truffles:
    • In a large mixing bowl, combine the shredded coconut and sweetened condensed milk. Stir with a wooden spoon or hand mixer until the mixture is well combined and sticky.
    • Divide the mixture into 12 larger portions (for the snowmen bodies) and 12 smaller portions (for the snowmen heads). Roll each portion into a ball, using your hands to shape them.
    • Roll the coconut balls in extra shredded coconut to fully coat them.
    • Pair each larger ball with a smaller one to form the body and head of each snowman. Dab a little melted white chocolate on top of the larger ball and stick the smaller ball on top. Let the snowmen firm up at room temperature or refrigerate for about 10-15 minutes.
