Ingredients:

Coconut Sponge Cake:

  • 159g Eggs
  • 85g Sugar
  • 76g Wheat Flour
  • 43g Coconut Flakes
  • 64g Milk
  • 34g Vegetable Oil
  • 4.5g Baking Powder

Strawberry-Coconut Ganache:

  • 28g 33% Cream
  • 42g Strawberry Puree (sugar-free, homemade)
  • 140g White Chocolate
  • 56g Coconut Puree

Strawberry Mousse:

  • 26g Gelatin Mass (220 bloom 1:6)
  • 13g Egg Yolk
  • 7g Sugar
  • 50g Milk
  • 45g Strawberry Puree
  • 55g Mascarpone
  • 38g 33% Cream

Coconut Mousse:

  • 40g Coconut Puree
  • 16g Gelatin Mass (220 bloom 1:6)
  • 60g 33% Cream (1)
  • 10g Sugar
  • 110g 32% White Chocolate
  • 100g 33% Cream (2)

Instructions:

  1. Sponge Cake: Whip eggs with sugar until fluffy. Mix milk and oil, add a part of the egg mixture, combine, and return to the main mixture. Add dry ingredients, mix, and bake at 165°C for about 35 minutes.
  2. Ganache: Heat the cream, pour over chocolate, blend. Add hot puree, blend again, and stabilize for about 4 hours. Pipe onto the sponge cake as peaks.
  3. Strawberry Mousse: Whip cream to a semi-whipped state, chill. Blend egg yolk, sugar, and milk, heat to 83°C while stirring, cool to 31°C. Whip mascarpone with puree. Combine whipped cream, anglaise, and mascarpone mixture. Pour into the cake mold.
  4. Coconut Mousse: Whip cream (2) to a semi-whipped state, chill. Heat cream (1) with puree, pour over chocolate. Add gelatin mass, blend. Cool to 29°C, combine with whipped cream, and pour over strawberry mousse.
  5. Place the sponge cake with ganache down on the mousse. Freeze. Decorate the cake as desired.
