Ingredients:

  • 250 ml Milk (1 cup + 1/4 cup)
  • 1 tbsp Instant Yeast (10g)
  • 1/2 Cup Sugar (80g)
  • 1 pinch of Salt
  • 90g Melted and Cooled Butter
  • 1 Room Temperature Egg
  • 1 packet of Vanilla
  • 4-4.5 Cups Flour (added gradually)

For the Filling:

  • 1 Cup Brown Sugar
  • 2 tsp Cinnamon
  • 2 tsp Instant Coffee
  • 4 tbsp Softened Butter (75g)

For the Frosting:

  • 3 heaping tbsp Cream Cheese (Labne, 90g)
  • 3/4 Cup Powdered Sugar (90g)
  • 45g Softened Butter
  • Coffee to taste (I used Nescafe dissolved in hot water)

Instructions:

  1. Dough Preparation:
    • Mix warm milk with sugar and yeast. Add butter and egg. Begin incorporating 3.5 cups of flour along with vanilla and salt. Knead for 10-15 minutes (6-7 minutes if using a stand mixer). Gradually add remaining flour to form a slightly sticky dough. Oil your hands to shape it. Let it rise in a covered bowl for 30-45 minutes.
  2. Prepare the Filling:
    • Mix brown sugar, cinnamon, and instant coffee. You can spread the butter on the dough first and then sprinkle this mixture over it.
  3. Assemble and Bake:
    • Roll out the dough into a rectangle, spread the filling, and roll it up. Cut into 2-3 inch pieces and place them on a baking tray, slightly apart. Let them rise for an additional 15 minutes. Bake at 180°C until lightly golden.
  4. Make the Frosting:
    • Whip butter and powdered sugar. Add cream cheese and then gradually mix in the coffee.
  5. Final Touches:
    • Pour the frosting over the rolls and serve. For rolls that won't be eaten immediately, freeze without frosting and add it just before serving.
