Cookies & Cream Cupcakes with Chocolate Ganache Filling

Savor these airy, light, and incredibly moist cupcakes with a surprise chocolate ganache center and a luscious cookies & cream buttercream frosting.

For the Cupcake (Yields 6 cupcakes):

  • 100g Milk (either unsweetened almond milk or your preferred whole milk)
  • 1/4 tsp White Vinegar
  • 70g Granulated Sugar
  • 30g Canola Oil
  • 1/2 tsp Vanilla Extract
  • 5g Corn Starch
  • 3/4 tsp Baking Powder
  • 1/8 tsp Baking Soda
  • 75g All-Purpose Flour
  • A pinch of Salt
  • 6 Cookies (Oreo or a similar choice)

Method:

  1. Begin by combining milk and vinegar in a bowl. Allow it to rest for 5 minutes.
  2. Introduce sugar, oil, and vanilla extract to the milk mixture, stirring until the sugar almost dissolves.
  3. Sift all the dry ingredients together and fold them into the wet mixture.
  4. Place a cookie at the base of each cupcake liner. Pour in the batter over the cookie.
  5. Bake at 350°F (175°C) for 13-15 minutes or until the cupcakes are firm to touch.

For the Milk Chocolate Ganache:

  • 50g Milk Chocolate (either chips or couverture chocolate bar)
  • 25g Heavy Whipping Cream

Method:

  1. In a bowl, combine the chocolate and cream.
  2. Microwave for about 15 seconds. Stir until the mixture is smooth and glossy.

Oreo Buttercream Frosting:

  • 110g Butter
  • 30g Powdered Sugar (1)
  • 100g Powdered Sugar (2)
  • 25ml Milk (almond milk or your choice)
  • 1/8 tsp Salt
  • 4-5 Crushed Cookies (Oreo or similar)

Method:

  1. Using an electric whisk or paddle attachment, whip the butter for 4-5 minutes on medium speed until it turns fluffy.
  2. Incorporate powdered sugar (1) and continue beating for another 2 minutes.
  3. In a separate bowl, blend powdered sugar (2) with milk until the sugar dissolves. Gradually add this mixture to the buttercream along with the salt. Beat for about 5-10 minutes or more if required, to achieve a fluffy and silky consistency.
  4. Finally, fold in the finely crushed cookies.

Assembly:

  1. Once the cupcakes have cooled, create a small cavity in the center of each one and fill with the prepared chocolate ganache.
  2. Generously frost the cupcakes with the Oreo buttercream.
