Creamy Matcha Cheese Squares with Grapes

Dive into these delightful matcha-flavored squares. With a soft and stretchy exterior and a creamy, fruity interior, they’re the perfect balance of flavors and textures. The combination of matcha’s earthy bitterness, cream cheese’s rich creaminess, and grapes’ sweet-tartness is a treat for the taste buds.

Ingredients:

For the Matcha Squares:

  • Glutinous Rice Flour: 170g
  • Corn Starch: 20g
  • Sugar: 20g
  • Matcha Powder: 10g
  • Milk: 220g
  • Unsalted Butter: 20g

For the Fillings:

  • Cream Cheese: 250g
  • Sugar: 20g
  • Green Grapes (diced): 20g

Instructions:

  1. Prepare the Matcha Squares:
    1. In a bowl, combine glutinous rice flour, corn starch, sugar, matcha powder, and milk. Whisk until smooth.
    2. Sieve the mixture to ensure there are no lumps.
    3. Pour into a steaming dish, and cover tightly with plastic wrap, ensuring a few holes are poked for steam to escape.
    4. Steam over medium heat for 25 minutes.
    5. Once done, carefully remove the wrap and while the mixture is still warm, add in the butter. Knead the mixture until it’s smooth and elastic in texture.
  2. Prepare the Cream Cheese Filling:
    1. In a mixing bowl, blend the cream cheese and sugar until smooth and creamy.
    2. Fold in the diced grapes until well-distributed.
    3. Transfer the mixture to a piping bag.
  3. Assembling the Matcha Cheese Squares:
    1. On a long piece of plastic wrap, pipe out three lines of the cream cheese filling side by side, forming a square shape.
    2. Wrap it gently with the plastic, shaping and ensuring it’s compact. Set aside momentarily.
    3. On a work surface, roll out the steamed matcha mixture into a thin, elongated square. Ensure its size matches the cream cheese square you prepared.
    4. Carefully unwrap the cream cheese square and place it on top of the matcha layer.
    5. Gently wrap the matcha layer around the cheese, ensuring a snug fit. Trim any excess.
    6. Sprinkle the exterior with some cooked glutinous rice flour to prevent sticking.
    7. Using a sharp knife, cut into bite-sized squares.
