    • Warm Milk: 200 milliliters

    • Dry Yeast: 7 grams

    • Creamy Butter: 80 grams

    • Beat the whole egg and yolks with sugar and salt until frothy. Continue beating, adding melted creamy butter. Incorporate the levain (step 1), then gradually add sifted flour. Mix first with a spatula and then knead by hand for 15 minutes. If the dough is sticky, grease it and your hands with oil instead of adding more flour. Cover with food wrap and let it rise in a warm place for 1.5-2 hours.

    • Divide the dough into two equal parts. Roll each into a rectangle. Spread ricotta over the dough, sprinkle almond flakes, and add raisins and candied fruit. Roll up into a log, cut lengthwise, leaving one end intact. Twist it into a spiral shape.
