Recipe:

Ingredients:

  • 1/3 cup of creamy peanut butter
  • 1/4 tbsp of pure pumpkin puree
  • 1 tbsp of pure maple syrup
  • 1 1/4 cups of semi-sweet or dark chocolate chips (refined sugar-free if desired)
  • 2 tsp of coconut oil (omit for oil-free and add 1/4 cup more chocolate chips)
  • 3 tbsp of chopped peanuts
  • Mini muffin liners and a mini muffin tray

Instructions:

  1. In a small bowl, mix together peanut butter, pumpkin puree, and maple syrup until well combined.
  2. In a microwave-safe bowl, add chocolate chips and coconut oil. Melt them in the microwave in 30-second increments, stirring in between, until smooth.
  3. Pour 1 tsp of melted chocolate into each of the 12 mini muffin liners. Tilt each liner gently in a circular motion to coat the sides with chocolate.
  4. Add 2-3 tsp of the peanut butter mixture into each liner, over the chocolate layer.
  5. Sprinkle each with chopped peanuts, then top with an additional 1-2 tsp of melted chocolate, or enough to cover the filling completely.
  6. Chill in the refrigerator until the chocolate is firm and set.
  7. Enjoy these crunchy, nutty, and subtly sweet peanut butter pumpkin cups chilled for a delightful and unique treat!
