Equipment Needed

To make this delicious Cypriot Mahalepi, you will need the following equipment:

  • Saucepan
  • Whisk
  • Measuring cups and spoons
  • Serving bowls
  • Refrigerator

Ingredients: (Makes 5 servings)

  • 4 cups water
  • 4 heaped tbsp corn starch
  • 1 tbsp sugar
  • A little rose water (optional)

For Serving:

  • Rose syrup
  • Cold water
  • Sugar (optional)

Instructions:

  1. Prepare the Mahalepi Mixture:
    • In a saucepan over medium heat, combine the water, corn starch, and sugar. Stir continuously with a whisk to prevent lumps from forming.
    • Once the mixture starts to thicken, add a little rose water if desired. Continue stirring until the mixture thickens completely, which should take about 15-20 minutes.
  2. Set the Mahalepi:
    • Rinse the serving bowls with cold water to make it easier to unmold the Mahalepi later.
    • Divide the thickened mixture evenly among the bowls and allow them to cool completely at room temperature.
  3. Chill the Mahalepi:
    • Once cooled, transfer the bowls to the refrigerator and chill for 3-4 hours until fully set.
  4. Serve:
    • To serve, invert a bowl of Mahalepi onto a deep plate.
    • Add as much rose syrup as desired and pour cold water over the Mahalepi.
    • If you prefer a sweeter dessert, you can sprinkle additional sugar on top.
