Ingredients: Dough:

  • 250g all-purpose flour
  • 60g milk
  • 20g powdered sugar
  • 4g salt
  • 2 eggs
  • 5g baker’s yeast
  • 50g unsalted butter

The Garnish:

  • 200g cocoa hazelnut spread

The Icing:

  • 200g milk chocolate
  • 50g hazelnuts
  • 30g neutral oil (such as sunflower or rapeseed)

Instructions:

  1. In the bowl of your food processor, combine the flour, baker’s yeast, salt, and powdered sugar. Mix well.
  2. Add the eggs and milk to the dry ingredients, and knead the dough for about 10 minutes.
  3. Gradually add the butter in small pieces, and continue kneading until the dough is smooth and pulls away from the sides of the bowl.
  4. Cover the dough with a clean cloth and let it rise in a warm place until it has doubled in volume.
  5. Once the dough has risen, divide it into 8 equal pieces. On a lightly floured surface, gently roll out each piece into a disk approximately 6cm in diameter.
  6. Place about a spoonful of cocoa hazelnut spread in the center of each disk, then carefully fold the dough over the filling and seal to form a ball.
  7. Arrange the buns on a baking tray lined with parchment paper, cover, and let them rise again until doubled in size.
  8. Preheat your oven to 180°C (356°F) and bake the buns for around 10 minutes, or until golden brown.
  9. For the icing, start by roasting the hazelnuts in an oven preheated to 150°C (302°F) for 20 minutes. Allow them to cool slightly, then rub them to remove the skins and roughly crush them using a mortar, blender, or knife.
  10. Melt the milk chocolate with the neutral oil in a double boiler, then stir in the crushed hazelnuts.
  11. Once the buns have cooled, generously frost them with the chocolate hazelnut icing.

Enjoy!
