  • 3 egg yolks
  • 3 egg whites

Instructions:

  1. Melt the Chocolate:
    • Break the dark chocolate into small pieces and place them in a heatproof bowl.
    • Melt the chocolate using a microwave or a double boiler method. If using a microwave, heat the chocolate in 30-second intervals, stirring in between until fully melted. If using a double boiler, place the bowl over a pot of simmering water and stir until melted.
    • Let the melted chocolate cool slightly.
  2. Prepare the Cream Mixture:
    • In a saucepan, combine the whipping cream and milk.
    • Heat the mixture over medium heat until it just begins to simmer, then remove from heat.
  3. Combine with Egg Yolks:
    • In a mixing bowl, whisk the egg yolks until they become pale and slightly thickened.
    • Gradually pour the warm cream mixture into the egg yolks, whisking constantly to prevent the eggs from curdling.
    • Return the mixture to the saucepan and cook over low heat, stirring continuously until it thickens slightly and coats the back of a spoon.
    • Remove from heat and let it cool slightly before stirring in the melted chocolate until smooth.
  4. Beat the Egg Whites:
    • In a clean mixing bowl, beat the egg whites using a hand mixer or stand mixer until soft peaks form.
    • Gradually add the sugar and continue to beat until stiff peaks form.
  5. Fold and Combine:
    • Gently fold the beaten egg whites into the chocolate mixture using a spatula. Start by folding in a small amount of egg whites to lighten the mixture, then gently fold in the rest until fully combined and smooth.
  6. Chill and Serve:
    • Spoon the chocolate mousse into serving glasses or bowls.
    • Refrigerate for at least 2 hours or until set.
    • Optionally, garnish with whipped cream, chocolate shavings, or fresh berries before serving.
