  • 200g sugar
  • 230g whipping cream
  • 60g cocoa powder
  • 20g softened gelatine

  • 30g warm heavy cream

  • 8 egg yolks + 20g sugar
  • 20g cocoa powder
  • 8 egg whites
  • 130g sugar

  • 165g dark chocolate
  • 12g softened butter
  • 80g whipped cream + 5g cocoa powder
  • 300g whipped cream

Instructions:

  1. For the glaze, heat water, sugar, whipping cream, and cocoa until slightly boiling. Add gelatine, stir, homogenize, cover, and refrigerate.
  2. Make the sponge by mixing melted dark chocolate with heavy cream and butter. Blend egg yolks with sugar, and cocoa. Whisk egg whites with sugar. Combine all and bake in a lined 30×40 cm sheet at 170°C (338°F) for 15-17 minutes.
  3. For the mousse, melt chocolate with butter. Heat whipped cream with cocoa, combine with chocolate. Beat additional whipped cream and fold into the chocolate mixture.
  4. Cut the sponge into rectangles, layer with chocolate cream, and refrigerate for 2 hours.
