  • 200 grams of butter (or margarine for a dairy-free option)
  • 200 grams of 70% dark chocolate
  • 4 eggs
  • 200 grams of granulated sugar
  • 50 grams of packed brown sugar
  • 60 grams of cocoa powder
  • 50 grams of ground almonds
  • 70 grams of matzo cake meal
  • 100 grams of milk or additional dark chocolate, chopped

Instructions:

  1. Chop the dark chocolate and place it in a bowl.
  2. Prepare brown butter: In a saucepan, melt the butter over medium heat until it bubbles and turns a nutty brown color. Reduce the heat and continue to cook for a few minutes, then pour the butter over the chopped chocolate. Wait a minute and stir until the chocolate is fully melted and combined.
  3. In a mixing bowl with a whisk attachment, combine eggs and both sugars. Beat on medium speed for about 8 minutes until the mixture is very fluffy. Stir in the chocolate mixture until well combined.
  4. Sift in the cocoa powder and then add the ground almonds and matzo cake meal, mixing just until combined.
