- 130 grams of dark chocolate (70% cocoa solids)
- 25 grams of unsalted butter
- 1/4 teaspoon of salt
- 1 large egg (approximately 54 grams without shell)
- 28 grams of egg white (about from 1 large egg)
- 25 grams of soft brown sugar
- 65 grams of granulated sugar
- 15 grams of all-purpose flour
- 30 grams of unsweetened cocoa powder

- In a stand mixer, whisk together the egg, both sugars, and salt for 5 minutes on a medium-high setting. Then increase to the maximum speed and continue whisking for another 7 minutes.
- While whisking, gently melt the chocolate and butter together until just melted (aim for around 60°C). Carefully fold this into the egg mixture until just combined.
- Sift the flour and cocoa powder into the mixture, folding gently until just integrated.
- Scoop 1.5 tablespoon portions of the cookie mixture onto a baking tray lined with parchment paper.
- Bake in a preheated oven at 180°C (356°F) for 6 to 6 and a half minutes. The edges should be set but the center will remain soft.
